Cranberry Pistachio White Chocolate Chip Blondies

I have a lovely recipe for Cranberry, pistachio blondies to share. They are a little bit healthier than the average blondie and are fabulous!  It makes enough to fill an 8x8 pan and can easily be doubled

¾ c sugar
½ c whole-wheat flour
½ c all-purpose flour
1/3 c butter, melted
1¼ c fresh or frozen cranberries (defrosted if you do frozen)
½ c chopped pistachios
¼ c white chocolate chips

Preheat oven to 350. Beat the eggs in a medium bowl until a pale consistency about 1-2 minutes. Slowly add in the sugar, beating until it’s thoroughly combined with the eggs. Mix in both of the flours gradually and then add in the melted butter, mix well. Stir in cranberries, pistachios and white chocolate chips.  Spread mixture evenly in a buttered 8x8 pan and bake for 40-45 minutes until the top is golden brown.

They are super good and always a big hit with the crowds. The tart cranberries go perfectly with the contrasting sweetness, I love them and they are fun for the holidays. 

Pretty good if you ask me! I make them every year and I love them, I think I originally found it in Seventeen Magazine!
