Cranberry Salsa with Cream Cheese

I have been seeing all these pins for the appetizer I made for thanksgiving and well I figure I should post it so you followers and visitors of Craft Geek can have access to it as well! This a really great a festive appetizer and the best part is it can be made the night before! So it definitely make it the night before Thankgiving while I cook my cranberries for my delicious sauce. It is a great recipe but do not taste as you go, you will not like the taste… I serve it over cream cheese with tortilla chips but it is good with crackers as well. It is seriously the best thing ever and very unique.

Cranberry Salsa Dip with Cream Cheese
1 (12-ounce bag) or 3 cups fresh cranberries, rinsed and drained
1/4 cup minced green onions
2 small (approximately 2 tablespoons) jalapeno chile peppers, cored, seeded and minced
1/2 cup granulated sugar
1/4 cup fresh cilantro leaves, minced
2 tablespoons finely-grated fresh ginger
2 tablespoons fresh-squeezed lemon juice
2 (8-ounce) packages cream cheese

Rinse, drain, and pick over cranberries, (discarding all that are soft or bruised). Place them in a food processor; pulse until finely chopped but not mushy.
Place crushed cranberries in a bowl; mix together with green onions, jalapeno peppers, sugar, cilantro leaves, ginger, and lemon juice. Cover with plastic wrap and refrigerate at least 4 hours so flavors develop (salsa will be too sharp and tart to begin with).
On a serving plate, place cream cheese; cover with the dip. Garnish, if desired, and served with crackers or tortillas chips.

I make this for Thankgiving and Christmas because I love it so much. I would highly recommend making this, I am sure it will be a big hit with your guests.

Cranberries- seriously I make the bet cranberries ever so if you are looking for a recipe for cranberry sauce comment here and if I get some comments I will post it!
Mashed potatoes and gravy
Green beans with homemade mushroom gravy- I like anything homemade better

Pumpkin pie with a walnut brownsugar topping and grahamn cracker crust… seriously bomb!!

So that is about it and I get to do it 1.5 times… once in SoCal and a smaller scale one home with a turkey breast instead of a whole turkey just so I can have leftovers for sandwiches. I love me some Thanksgiving sandwiches… rolls, mashed taters, turkey, cranberries and stuffing all on the roll…. Yummmmm!

I am making myself hungry but anyways seriously you need to try this recipe it is the best!
