Roasted Beets

So since moving to Sacramento I have been looking on Yelp for all kinds of new places to try and I finally made it to the Farmer’s Market in downtown on W and 8th St. I loved it, it was great and there was an abundance of choices and it was all rather cheap. I only spent $10 and got a bundle of beets, Asian pears, eggs, chile tortillas and a satchel of lavender. The beets are what this blog post is about.  I love beets and especially love roasted beets.

I took the bundle and separated the greens to say for a different time to sauté up with some bacon and garlic since I just googled and found out you can eat them so I intend to. So I had three softball size beets that I peeled and chopped and put into a glass pan. I seasoned them with about 3 tbs of olive oil, 3 tbs diced butter, about 2/3 tbs garlic salt and a generous amount of black pepper. Once everything was drizzled and seasoned I mixed it all up to make sure everything was coated and then covered the pan with foil and baked at 450 for 45 minutes. I took it out of the oven stirred it all up, removed the foil and baked it for another 10 minutes.

Long time but worth it and peeling is kind of a pain in the butt but I don’t mind purple hands so I will do this again since I will definitely be going to that farmers market again.

So I will let you know about the beet greens that I am going to sauté up with butter, bacon, garlic and some pepper. And in other news I have some chicken drumsticks in the Crockpot for dinner and going to make some potatoes to go with it. What else is on the menu this week I am not really sure. I am thinking some chicken tacos, some seafood pasta and I am not really sure what else but I am sure I will figure it out.
