Crunch Wraps

So sometimes I get a random idea and it works out great and this is one of them. I was writing the grocery list and brainstorming my menu for the week when I though hmmm what if I were to make Taco Bell esque crunch wraps at home?! I have to say that they turned out really great so that was a good way to start our night and now we are finishing it by sitting on the porch sipping hot cocoa and enjoying the warmer weather we have had this week. It is really quite lovely outside tonight and the boy really wanted to smoke a cigar and wanted me to join him outside so I did. :)

So outside with jackets and beanies and laptops and ipads ahah, roughing it on the porch ;) all the while blogging about my super awesome dinner creation. I am going to put below what I used but keep in mind I cook for two but this recipe I probably could have made four with the ingredients and you can always substitute!

For the "crunch wraps" you will need:
  • 2 chicken breast
      • I cooked mine in a little of olive oil and seasoned with salt, pepper and dried cilantro. I got a nice golden brown color on both sides. 
  • flour burrito tortillas
  • tostada shells
  • guacamole
  • sour cream
  • refried beans
  • mexican shredded cheese
I used chicken since I have an abundance of chicken breast in the freezer and I am trying to use up my freezer meats since Nico gets hypercritical over my grocery shopping... I love being micromanaged... but you can use ground turkey, ground beef, steak, pork, carnitas any meat you want or desire.

I will explain it here and then post the pictures to follow that show a step by step. I pulled out a pan and heated it up while I assembled my "crunch wrap". I took my flour tortilla and buttered up the area I know would go down in the pan so it would get nice and golden- you do not have to, I just like to. Put a little bit of refried beans in the center and then top with the cheese- excuse the photos on the first one I did cheese then beans and realized that was well a little dumb. So you got beans, cheese, next comes chicken then the tostada shell. On top of the tostada shell I just put some sour cream and then some guacamole and then you press it down a little and fold the tortilla on the top.

And Just for fun some other ideas are putting lettuce, tomatoes, jalapenos, enchilada sauce, nacho sauce, bbq chicken, ground turkey, ground beef, or maybe even steak! 

I think next time it will be a more traditional crunch wrap modeled after the beef ones but with ground turkey since we enjoy that more.

So now that this is done I think I shall get back to enjoying my patio time with Nico and the fur baby.

  3. Yay! It will let me comment now! I made a semi version of this yesterday... only I didn't have any tostadas so I broke a crunchy taco shell in half and pieced it together. It was soooo yummy! I loved the crunch in the middle :)

    And I started following you when I found the crunch wrap... can't wait to see more!
