Super Bowl Appetizers!

I really like snacking... it can be a problem but during the Superbowl you are supposed to snack so I wanted to think of some super yummy snacks that I love and that I know others love.

I started with some deviled eggs, deviled eggs are great because you can change the flavors and do so many different combinations with them.

Boil your eggs. Keep in mind the number of eggs you boil you get double that for the deviled eggs. I did a dozen because we were having a pretty large party. I boil my eggs by putting them in a large sauce pan covering them with water, bring to a boil and remove from the heat place the lid on and let sit for 10 minutes. After 10 minutes rinse the eggs under cold water in the sink.

Now onto the good stuff!

Barbeque Ranch Deviled Eggs
  1. I peel the  boiled eggs and then slice them in half separating the yolks from the whites. 
  2. Put the yolks in a bowl with 3-4 tbs peppercorn ranch (regular ranch and some pepper will work too) added some sliced green onions and mixed the mixture together. Add more ranch or a little bit of mayonnaise depending on the consistency you desire to have. 
  3. Add yolk to white either by piping them via a Ziploc bag or just spooning the mixture in drizzle the top with some barbeque sauce. Add some green onion slices or chives for a pretty presentation... and maybe get a nice squirt bottle and drizzle the barbeque sauce in an artful manner.

    Now the other thing I really love is Jalapeno poppers I love them so much that I made them for lunch yesterday and lucky me I only ate a couple of them yesterday so I have more for lunch today.

    Cream Cheese and Pancetta Jalapeno Poppers

    I was making these for myself so I only picked up three jalapenos but I probably should have only done two but I really love Jalepeno poppers!

     You will need:
    • Jalapenos
    • Block of Cream Cheese
    • Cheddar Cheese
    • Green Onions
    • Pancetta or bacon
    • Salt & Pepper
    Before we get started I would recommend wearing gloves just cause peppers are evil... it lingers for days and I always seem to touch my eye and that is a lovely burn.

    1. Take the peppers cut them in half and core and deseed them. 
    2. Take the cream cheese (room temp works best) add about 2 tbs or more to taste of chopped green onions. Sprinkle in about 1/4 cup shredded cheddar cheese and 1tsp freshly grated black pepper. Mix well
    3.  Spoon the mixture into the hollowed out peppers 
    4. Wrap each popper with  one slice pancetta ( bacon can be substituted. Put in a 400 degree oven for 25-30 minutes and yummy!

      I prefer pancetta to bacon because of the shape of pancetta (round vs slice) and the thinness of pancetta allows it to get more crisp. Pancetta is just a more fanciful form of bacon so it is really up to you if you use bacon or pancetta.

      1. Okay those chilies look so amazing. I have done them wrapped in bacon on the grill but pancetta? What a good idea. I love pancetta and I bet it cooks more even. I am trying this way for sure.
