So I wanted to make a grilled veggie sandwich using my amazing new griddle/grill pan.
I prep my vegetables by brushing some olive oil, salt &pepper and garlic salt. I used a combination of zucchini, red onion, red bell pepper & asparagus.
If you are in a rush you can easily partially cook them in the microwave in one of those steam bags. Another thing I may recommend is using roasted red bell peppers that come in the jar since they tend to take a long time.
The possibilities are endless and next time I am going to make a pesto and use a nice slice of fresh mozzerella too. My mouth is watering already!
