Potato Skins

On Monday I made twice baked potato casserole to go with my ribs and saved the skins for yesterdays meal. I wanted to make potato skins after going to eat at Chili’s on Saturday and remember how good they are and wondering why I hadn’t made any before! What was I thinking?!

I used red potatoes that I steamed in the microwave, I shelled out the inside until I had about 2 cm or so of potato left in the skin.  Since I did this on Tuesday I took them out of the oven when I took my meat out of the fridge and placed them on a baking sheet in the oven on warm for a little over an hour.

Now if you are using them warm then just put them in a 350 degree oven to get slightly crisp.

After my potatoes were crisp I added chopped bacon to them.
A lot of bacon!

Then I added shredded cheese.

Next I added sliced green onions, and a lot of them because we love green onions in this house.

I returned them to the oven and let the cheese melt. This time they were in the oven at 350 while my meat finished cooking.

I took them out of the oven and topped with a dollop of sour cream and there you have it! Chili’s inspired baked potato skins a great and cheap side that is versatile. I will be making some other variations of this again soon!
