So I had posted about making homemade sushi here but since I love sushi so much I decided to do another post and show more of a step by step.
So starting I rinsed the rice. I put 1 cup of rice in the bowl and covered it with water and swished it around, you can see that it is rinsing. The water goes from clear to a murky white, continue to rinse the rice until the water runs more clear. It took me about 3-4 times.
After it was rinsed I cooked it as I posted on my last sushi posting but I used only 1 cup of rice and 1 cup of water. The 2 cup seems to make too much and I really do not like to waste ingredient so I halved the recipe and it worked perfectly.
To put the sushi together lay I piece of seaweed on top of your work surface and apply rice to the rough side of the seaweed.
For what I call the Volcano roll put together a California roll using crab, cucumber, avocado roll it together. Press it tightly together using your sushi mat.
For the volcano part I use baked scallops. I make the mixture by chopping up the scallops and mixing with masago (optional), mayo, siracha and green onions.
Place the mixture on foil or in a pan and place under the broiler for about 3 minutes. The mayo mixture will get a nice brown bubble on it and the scallops will firm up. Slide the mixture on top of the sliced California roll and top with some teriyaki or other sweet sauce.
This is one of my favorite rolls that I get at my favorite sushi place. Though my roll is not exactly the same it is a close second.
So make some tempura shrimp:
Onto my other favorite roll the crunchy roll. Do all that you did above but instead of crab use cooked tempura shrimp or use both. Slice and drizzle with a sweet sauce.
