Salmon with Avocado Salsa


I have some exciting news I get to record a segment on Monday for fox 40 news! I am pretty much oooberly stoked! 

It has basically been an exciting day and I made a dinner Nico thoroughly enjoyed! 

 Steelhead with Avocado Salsa 
Ingredients:
  • Steelhead or salmon
  • 1 tsp dried cilantro
  • 1 tsp ground cumin
  • 1 tsp ground pepper
  •  1 tsp smoked paprika
  • 1 tsp onion powder
  • 1 tsp salt
  • 2 tbs olive oil
Mix the spices together in a bowl, set aside.
Rinse the fish, drizzle and drizzle with olive oil.
Rub the fish and let it marinate for at least 30 minutes.
Grill, bake or saute the fish. I like to bake the fish. I put my fish in a cold oven, turn the temperature to 400 and cook for 25 minutes.

Now chop and prep the salsa

Avocado Salsa:
  • Small red onion
  • Mild pepper
  • Fresh cilantro
  • Fresh cooked corn
  • lime juice
  • 2 tbs olive oil
  • avocado
 For the salsa dice and mix all ingredients minus the avocado and let soak up the flavors while the fish marinates.

To serve place the fish on the plate, top with the chopped salsa mixture and avocado slices on top. I served it along with white rice and salad, it was super yum!
