Another Monday, were you ready for it? I swear Monday creeps out of nowhere and just like that bam it is back! Not a good feeling but oh well it’s not like I can skip Mondays!

There are some exciting things happening today, like giving my first official pitching lesson. So last Monday I am on my run to train for my 5K that is Saturday and I saw a girl pitching. I noticed a couple things she should do instead and decided to say something and next thing I know I am there for 45 minutes talking pitching. So we are going to try it out and see if she likes me as a coach. I am pretty excited since I ooberly miss softball!

Back in the day

 Every time I see softball I think of all the things I could have done differently and where I may be now. However; I firmly believe that everything happens for a reason so I know I am who I am today because of all my choices.

Now for my menu planning, I am working on planning lunches as well so that I can make better lunch choices.  

Monday 5/7: Lunch- Cashew Chicken Salad, Dinner- Pork Chops with mashed potatoes and parmesan asparagus

Tuesday 5/8: Lunch-salad and ½ chicken salad sandwich, Dinner-BBQ Drumsticks and potato skins

Wednesday 5/9: Lunch-pasta salad, Dinner- Mexican shrimp with Spanish rice

Thursday 5/10: Lunch- pasta salad, Dinner-BBQ Balsamic Chicken with sweet potatoes and corn

Friday 5/11: Lunch- leftovers, Dinner- out

Sunday 5/13: Dinner- Pan seared scallops with lemon parmesan orzo & asparagus

I will also probably make crepes again this weekend for lunch or breakfast!

The Ingredients are:

·  4 eggs

·  1 cup whole milk

·  1/2 cup all-purpose flour

·  1 tablespoon sugar

·  1/8 teaspoon fine sea salt

·  3 tablespoons unsalted butter, cut into 12 cubes

Mix all of the ingredients except butter in a blender.

Heat a 10” pan over medium.

Melt one of the cut cubes of butter in the pan, add 1/4 cup crepe mixture and swirl it around to coat the bottom of the pan.

Let cook for about a minute then flip.

I learned how to do it from watching Giada, so you can watch her on food network if you want to see a visual.

Great crepes combos are peanut butter with banana, strawberries and whip cream, jam, peanut butter and jelly, nutella, syrup and butter, ham and cheese, basically anything you think will taste good!

I plan on making more savory crepes in the future so I will post them here when I do! :]

Now for the strawberry sauce, it is super easy. Take fresh strawberries, sugar and water and boil in a pan then cool. It is adding fresh strawberries and making a simple syrup. It can be done with any berry and you can add anything you want... I added some fresh mint into the strawberries :] Told ya it was easy!
