Fresh Heirloom Tomato Sauce

So I discovered Farm Fresh to You from Groupon and I am in love. It is so easy and I think a great price to get fresh, local, organic produce delivered to my door. You should check it out or try to find one near you! 

I had some heirlooms on had made some bruschetta but then I had tomatoes left over and wanted to do something different and thought tomato sauce! It makes enough for 4 servings but since we are a house of 2 we froze half of it for use at a later time!
Heirloom Tomato Sauce:

  • 2 red heirlooms
  • 1 green heirloom
  • 1 yellow heirloom
  • pint cherry tomatoes
  • 3tbs basil
  • 1 white onion
  • balsalmic
  • olive oil
  • 2 cloves garlic
  • ¼ cup grated parmesan

Start by saut√©ing the onion in a large sauce pan when slightly translucent add in chopped heirlooms and cherry tomatoes. Let all the flavors meddle while you chop 3 tbs basil, and mince 2 cloves garlic. Add to pan, stir and add in 1-3 tbs balsalmic to taste and let simmer. Once some of the cherry tomatoes have popped add the mixture to a blender and blend together. Return to pan, add some grated parmesan to the pan stir and let simmer while the pasta finishes cooking. 

Serve with some pasta or use on a veggie pizza mmm! I think that may be next on my list!
