20- Minute Jambalaya

I think it is safe to say you are a busy person. Is that true? I know I am even more in the next few weeks when I get back into the swing of working in an office again and stopping to work out on the way home. 

With that being said recipes like this 20-minute Jambalaya are amazing! Now I am not from the south, I do not cook traditional Jambalaya but I know what I like and what tastes good and this is quick, yummy and spicy! In my book that makes it good!
You will need: (For two servings)
¾ cup Minute Rice
¾ cup chicken broth- your preference
½ to 1 full link of cooked Kielbasa Sausage- your brand preference I like what is on sale
8 shrimp- cleaned, peeled and tails removed
½ cup frozen corn or 1 ear of fresh corn removed from the cob
¼ cup chopped red bell pepper
¼ cup chopped onion
2 tbs olive oil
Creole Mix:
1 ¼ tsp smoked paprika
1 tsp salt
1 tsp garlic powder
½ tsp onion powder
½ tsp black pepper
½ tsp cayenne (less if you don’t like spice… or omit)
½ tsp dried oregano
½ tsp dried thyme
mix together

Start by boiling the chicken broth for the rice. Let the broth come to a boil, add the rice, place the lid on and set aside.
Once you add the rice to the broth to steam heat a skillet over medium to heat and add 2 tbs oil to the pan.
Start by sautéing the onions let them soften slightly before adding in the corn and the red bell pepper.  Let cook for 1-2 minutes.
While the mix cooks slice the sausage and chop the shrimp.
Add the sausage and shrimp to the pan and let cook. When the shrimp is half way done (mostly pink) add the Creole seasoning and let the shrimp finish cooking about 2 minutes.
While the mixture finishes cooking, scoop the rice into the bottom of a bowl. Top with the sausage, shrimp, veggie mix and serve.
Perfect 20-minute meal and that is only because the broth takes a bit to boil or it could be a 10-minute meal!

Perfect for a date night or any other night really. 

 I hope you have a fabulous Valentine's Day,  Nico and I are going to be doubling with our friends to go to dinner and then see Die Hard in IMAX. Yes it was a joint decision as a couple to see it. I love the Die Hard movies!
