Banana Pudding Pie

How is your week going?
I hope it is going swell!

This is the calm before the storm for me, tomorrow begins my crazy weekend which I told you a bit about on Menu Plan Monday!

I am looking forward to all of it though as it will be super fun.

Well now what was I talking about... oh yeah.. PIE!
My brother was in town from Florida not too long ago so we had dinner at my mom's house. I was asked to bring a dessert and well to be completely honest I was being cheap so I thought of something that in total cost me  $6 for 8-10 servings depending on how big you slice it.

In addition to being cheap it was so ridiculously easy!

I used:
instant vanilla pudding
2 chopped bananas
graham cracker pie crust
1 1/2 cups milk
whipping cream
 2 tbs sugar
1 tsp vanilla extract
 Make the pudding per the directions on the packet but subtract 1/2 a cup of milk. You want it to end up thicker like custard. 
Once the pudding is thick mix in the chopped bananas
Pour pudding mix into the pie crust, refrigerate for 1-2 hours
Whip the cream with sugar and vanilla until you get medium peaks
Pipe or dollop the cream onto the pie
It was really easy and it required very little effort!
It was also very tasty and will be something I make again!

Mine is carmel pecan silk supreme pie from Baker's Square but there are none around me anymore.. guess I need to try to make it! Maybe that will be my undertaking for my Mom's birthday in September!
