Breakfast Casserole

I really don't like to waste food and some days I reallllllly hate going to the store too!

This particular evening was a day or two after we had a fondue party... so I had chunks of sourdough bread left, but had no idea what the heck to do with the sourdough bread.. I also had those lil' smokies left too... and again I had no idea what to make... so I thought about it and I thought about it some more and then Bam! 

I realized I could make a breakfast casserole for dinner. 

Ingredients:
diced sourdough bread
shredded cheese
eggs
sausage
milk
salt 
pepper

I put the bread into a glass oven proof dish.
 I diced the smokies, I shredded some cheese and beat some eggs.
 I poured the egg mixture (egg, a bit of cheese and milk whisked together) over the bread and made sure it was mostly covered, then I put some foil over it and let it sit for a while.

Oh and some green onions since I always have those on hand thanks to have them growing in my backyard.. and some cream cheese.. I had half a block leftover after I made some frosting!
About an hour later I went and pushed some of the bread down so it would condense more and then let it sit some more and did the same thing. 
After about 4 hours I topped it with shredded cheese and baked at 375 for 30-45 minutes until the eggs set. 
For it being a super random idea it was awesome, so awesome that I would probably make it again when I have guests come over! It was a great use of stuff I had on hand it had nice flavor to it!

the great thing is you can make it any flavor too and really just throw it all together!
