Rainy Day Chicken Soup

Sometimes I just make recipes up... well a lot of times I do that and sometimes they taste gross and other times they are fabulous... 

What? at least I can admit to my flaws... it might be a day or two or a week later but I will admit it eventually... maybe.. or I will admit it to myself.. or not at all.. anyways where I was going with this is  that I made soup and it was yummy and I will make it again..

My soup used:
Chicken Broth (32 oz)
1 Small White Onion, diced
 10 Baby Carrots, sliced
1 Ear of Corn, kernels removed
1 Cooked Shredded Chicken Breast
3/4 Cup Pastina
Lemon Balm
1 tsp Celery Salt
1 tsp Ground Black Pepper
1 Clove Grated Garlic
1 Tbs Olive Oil

I started by sauteing the diced onion in a bit of olive oil.
I let it get some golden color in some spots and then I added in the chicken broth, the carrots and the corn. I let the broth come to a boil and set a timer for 5 minutes. I then added in the celery salt, pepper, chicken, lemon balm and pastina and let it cook for 4 minutes. 
After it cooked I removed the lemon balm and spooned the mixtures into the bowls and devoured it. 
It was super yummy and the chicken was leftover from my work pot luck on Friday so it was the perfect use. Soup on a rainy day when I have no voice so my body thinks it should cough to restore my voice..it was perfect. It was yummy and the leftovers were even better the next day!

So go make some soup, use my recipe, make your own, add something, take something out do what you want! That is the glory of cooking!
