Chocolate Chip Bacon Cookies

First things first I hope everyone had a Merry Christmas! I cannot believe it is already almost 2014... where did this year go? I could of sworn it was just July but here we are about to ring in a new year.

With the year ending I have been cleaning, organizing and doing all things that most people call "spring cleaning" but now that I have a few days off of work and school I figured it was a good enough time to do an early spring cleaning.

Part of that cleaning has been organizing my photos since they got a bit crazy over the last several months. It is apparently a good thing I looked through them as I totally forgot about posting my recipe for bacon chocolate chip cookies... 

How that happened I have absolutely no idea!

Now bacon and chocolate is good together.. you may not want to admit to it but it really is. Bacon is delicious, chocolate is delicious so together it is oober deliciousness!

And what is better for a post Christmas but pre New Year treat than bacon and chocolate?

I hope everyone's Christmas was great but let's get back to the recipe!

 I use my favorite recipe for chocolate chip cookies which is courtesy of Ghiradelli. 

 Ingredients:
4 strips bacon- chopped and cooked
11.5 oz semi-sweet chocolate chips
1 cup softened butter
3/4 cup sugar
3/4 cup brown sugar, packed
2 large eggs
2 tsp vanilla
2 1/4 cups unsifted flour
1 tsp baking soda

  1. Chop and cook the bacon, you want it crispy. Move to paper towel for it to drain. 
  2. In the meantime heat the oven to 375.
  3. Stir flour with the baking soda, set  aside. 
  4. In a large mixing bowl, beta the bugger with the two sugars at a medium speed until creamy and lightened in color. Add eggs and vanilla, one at a time and mix on low until incorporated. 
  5. Gradually blend dry mixture into creamed mixture. 
  6. Mix in chocolate chips and bacon!
  7. Bake on ungreased sheet for 9-11 minutes until golden brown.

Try them, you will love them, well you may not but I love them. I can't wait to make some other bacon treats!

11 1/2 ounces Semi-Sweet Chocolate Baking Chips
1 cup butter or margarine, softened
3/4 cup sugar
3/4 cup brown sugar, packed
2 large eggs
2 teaspoons vanilla
2 1/4 cups unsifted flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup walnuts or pecans, chopped (optional)

INSTRUCTIONS

Heat oven to 375ºF. Stir flour with baking soda and salt; set aside. In large mixing bowl, beat butter with sugar and brown sugar at medium speed until creamy and lightened in color. Add eggs and vanilla, one at a time. Mix on low speed until incorporated. Gradually blend dry mixture into creamed mixture. Stir in nuts and chocolate chips. Drop by tablespoon onto ungreased cookie sheets. Bake for 9 to 11 minutes or until golden brown. Note: The 11 1/2 ounces of Semi-Sweet Chocolate Chips can be substituted with any variety of chip flavor (i.e.- Milk Chocolate Chips, 60% Cacao Bittersweet Chocolate Chips, etc.)
